Mornings can be so busy. As a college student, you may find it tempting to rush out the door with just a cup of coffee and not much else. Butit isn’t a good idea to skip out on breakfast. That first little morning meal will give you exactly what you need to help you focus, maintain your energy level throughout the day and prevent you from overeating because you find yourself hungry in the middle of the day.

I’ve pulled together 25 easy to make breakfast ideas that not only taste great but are also inexpensive and healthy too. On this list you’ll find several simple, grab-and-go recipes as well as a few foods that will require a toaster oven or the use of a stove. Many of these recipes will make enough for you to enjoy for an additional day or two.

Crustless quiches are one of my favorite meals to make. Cook them in little ramekins or small baking dishes such as the one pictured. If you want to make a larger crustless quiche, you can find several recipes on the blog. They keep well in the refrigerator for a few days and are great for breakfast and dinner. 4. Ham, Cheese and Egg Breakfast Bagel

Ingredients

1 bagel

1/2 tablespoon butter plus more for the bagel

1 egg, lightly scrambled

1 slice of ham

1 slice of your favorite cheese

Instructions

Slice the bagel in half, toast it in your toaster, butter both sides and set aside.

Melt the butter in a small frying pan on medium high heat.

When the butter melts, pour in the egg.

Place a slice of ham and a slice of cheese on top of the egg.

Cook until the edges are firm and the center is no longer runny.

Using your spatula, gently flip the egg over so that one side touches the other (it will resemble and omelette).

Remove from the heat. Place “omelette” on one half of your bagel and top with the other half.

5. Egg Pita Sandwich

Ingredients

1/2 tablespoon butter

2 eggs, scrambled

1/4 cup shredded cheddar cheese

1 whole wheat pita bread, sliced in half

Instructions

Heat a skillet to medium high heat. Melt the butter in the pan. Add the eggs and stir until cooked. Sprinkle in the cheese and scoop the eggs into the pita bread.

7. Microwave Oatmeal

Ingredients

1/2 cup old-fashioned oats

1 cup water

toppings (butter, berries, raisins, sliced bananas or brown sugar)

Directions

Place the oats into a microwave safe bowl. Pour in the water and stir. Microwave at 50% power for 4 minutes. Stir and microwave an additional 4 minutes. Remove from the microwave and add the toppings of your choice.

8. Breakfast Cookies–A breakfast cookie is not only great to eat for breakfast, it’s a perfect after school or mid day snack!

9. Hard Boiled Eggs

It’s a good idea to make a pot of hard boiled eggs to keep in your refrigerator for breakfast and snacks.

Directions

Put the eggs in a single layer in a saucepan and cover with an inch or two of cold water. Add a pinch of salt to the water. Place the saucepan on the stove and bring to a boil over a high heat. Lower the heat to medium and continue to allow the eggs to boil for 2 minutes. Turn off the heat and remove the pot from the stove. Cover and allow the eggs to sit for 20 minutes.

Remove the eggs from the pot and place in a bowl of cool water until the eggs cool down a bit, replacing the water to keep cool if necessary. Once the eggs have cooled, strain the water from the eggs and store the eggs in the refrigerator. They should be eaten within 5 days.

Ingredients

1 small banana

1 large egg

Directions

Mash the banana in a small bowl. Add the egg and mix until blended.

Heat a pan coated with cooking spray on medium-low heat. Pour the pancake batter into the pan. When it begins to bubble and the edges easily pull away from the pan when pushed with a spatula, the pancake is ready to flip. Flip it and let it cook on the other side for 2-3 minutes.

19. Maple Cinnamon Crescent Rolls

Ingredients

1 egg

1/2 cup milk

1/2 teaspoon vanilla extract

1/4 teaspoon ground cinnamon

1 tablespoon butter, plus extra for serving

2 slices of whole wheat bread

syrup or fresh fruit

Directions

Crack the egg into a bowl, add the milk, vanilla extract and cinnamon and mix with a fork until completely blended.

Place the butter into a skillet and melt on medium heat.

Dunk one slice of the bread into the egg mixture and flip it over. Be careful not to let the bread soak for longer than a few seconds because you don’t want the bread to get soggy.

Place the bread into the skillet. After 2-3 minutes, check to see if the bottom is a light brown color. If so, flip the bread and cook the other side for another 3 minutes.

Remove from the pan and top with butter and syrup or fresh fruit.

Directions

Toast a bagel in a toaster. Add two or three slices of brie to the bagel and spread the jam over the brie.

A Few Notes…

** A few of these recipes require using a toaster oven. I can recommend this toaster oven from Hamilton Beach. I’ve used it for years and love that I can not only use it to bake in, but also to toast and broil as well.

** A couple of recipes require using a food processor. You don’t need to buy a large food processor. A smaller 3-cup modelcosts about $20 or less and will do just fine. A food processor will also come in handy for chopping onions or even making peanut butter.

** Immersion Blenders are sometimes a good alternative to food processors. They’re light, easy to maneuver and fairly affordable. Use them to make whipped cream, puree soups and even make smoothies.
