About these Chicken Totchos

Tater tots + nachos. Two amazing grub dishes combined, what could be better.If you’re not already drooling, what’s even more amazing is these totchos have a creamy yet spicy, chicken and cheese mixture loaded on top putting a whole new spin on your game day snack.

This recipe features two layers of tots and buffalo chicken that get baked to a golden perfection and all topped off with extra buffalo sauce, ranch, fresh green onions and some feta cheese.

Although I think nachos are 100% a finger food, these totchos are pretty messy. If you’re sharing, I think the best way to eat these Buffalo Chicken Totchos is to give everyone a fork and enjoy straight out of the pan.

Recipe Ingredients

  • Spices - cumin, chili powder, green goddess seasoning, ranch seasoning, salt, and pepper to flavor our buffalo chicken mixture.
  • Tater Tots - The base of our Totchos.
  • Chicken - I used rotisserie chicken which has great flavor, but you can also shred chicken breasts for these totchos.
  • Cream Cheese - Gives the buffalo chicken mixture a super creamy texture.
  • Buffalo Sauce - Frank’s is my favorite.
  • Cheese - I used both Colby Jack and Mozzarella. Both with a sweeter, milder taste as compared to cheddar that pairs well with the other flavors in this recipe, and both melt well, too! I've also made it with cheddar cheese in the past, which was tasty as well.

Substitutions and Variations

Customize your Totchos to your liking! Here's a few ways you can switch things up:

  • Base: The toppings on these totchos would make for great nachos also. Just swap out the tater tots for your favorite tortilla chips, layer and bake in a similar fashion and enjoy creative nacho variation!
  • Chicken: Instead of buffalo chicken, try barbecue chicken on these Totchos.
  • Toppings: This recipe includes extra cheese and green onion for garnish. Other topping ideas include sliced avocado, blue cheese crumbles, sliced jalapeño, red onion, or cilantro.
  • Dressing: I put extra buffalo wing sauce and ranch (try this Cottage Cheese Ranch Recipe) on my totchos. A blue cheese dressing, sour cream, or greek yogurt would also be good.

How to Make Buffalo Chicken Totchos

1. Preheat the oven to 350°F (or according to the tater tots instructions). In a large bowl, coat tater tots with 2 tablespoons olive oil, cumin, chili pepper, green goddess seasoning, and salt and pepper. Toss to ensure the tots are well coated.On a greased baking sheet, bake the seasoned tots according to bag instructions (35 minutes at 350°) or until golden brown.

2. In a mixing bowl (you can use the same one that you used to coat the tots in), combine buffalo sauce, mayo, cream cheese, and ranch seasoning packet. Use a hand mixer to beat the mixture together until the cream cheese is completely blended.

3. Remove all of the bones from the rotisserie chicken and shred pieces finely. Add to buffalo mixture along with 1 cup of Colby Jack cheese and ½ cup of mozzarella cheese. Use a rubber spatula to fold the mixture together.

4. Dice celery and carrots finely (the smaller the better!). Then fold the veggies into the mixture.

5. Once the tots finish baking, remove them from the baking sheet and arrange half of the crispy tater tots flat in a large skillet. Save the other half for the second portion of the skillet.

6. Top the tots with the remaining cheese, then layer on half of the buffalo chicken mixture on the tots. Arrange the remaining tots in the same radial arrangement on top of the buffalo chicken.Spread the rest of the buffalo chicken mixture on top of the second layer of tots. Garnish with remaining green onion, any extra cheese (highly recommended).

7. Bake for 25-30 minutes at 350°F or until the buffalo chicken dip is hot and cheese is melted. Drizzle ranch dressing, feta crumbles, additional hot sauce, and anything else on top prior to serving.Enjoy with a fork, with tortilla chips, or with celery and carrot sticks.

How do you store totchos?

Buffalo Chicken Totchos are best served straight out of the oven. If you have leftovers, store in an airtight container for up to three days. I advise against freezing the totchos, as you’ll lose the crunch of the tater tots.

How do you reheat leftovers?

Reheat your loaded totchos in a toaster oven, air fryer or regular oven as opposed to the microwave to keep the crispiness of the tater tots.About 8 minutes at 300°F will do the trick.

Can I make these without a cast iron skillet?

If you don’t have a cast iron skillet, make this recipe on a sheet pan.You will just do one layer of tater tots and one layer of the buffalo chicken mixture followed by the toppings, instead of stacking two layers as the recipe calls to do.

How do I serve totchos?

I like to put a big serving spoon in the pan and scoop portions onto plates and enjoy with a fork. You could also serve it dip style with tortilla chips, or with celery and carrot sticks.

Ingredients

  • 2 tbsp olive oil
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 tbsp green goddess seasoning, Trader Joe's
  • salt + pepper
  • 2 lbs bag frozen tater tots
  • 1 rotisserie chicken, pulled and shredded
  • 8 oz cream cheese
  • 1 cup buffalo sauce, Frank's
  • 2 tbsp lite mayo
  • 1 packet ranch seasoning
  • 1 ½ cups shredded Colby Jack cheese
  • 1 cup shredded mozzarella, or white cheddar or aged gouda
  • ½ cup diced celery
  • ½ cup diced carrots
  • ¼ cup green onion

Toppings

  • ½ cup white cheddar or mozzarella
  • 2 tbsp green onion
  • 2 tbsp ranch dressing
  • ¼ cup feta crumbles

Instructions

  • Preheat the oven to 350°F (or according to the tater tots instructions). In a large mixing bowl, coat tater tots with 2 tablespoons olive oil, cumin, chili pepper, green goddess seasoning, and salt and pepper. Toss to ensure the tots are well coated.

  • Bake the tater tots according to bag instructions (35 minutes at 350°) on a greased baking sheet.

  • While the tots are baking, start working on the buffalo chicken mixture. Remove all of the skin and bones from the rotisserie chicken (if not already starting with prepared shredded chicken). Shred the piece finely.

  • In a mixing bowl (you can use the same one that you used to coat the tots in), combine buffalo sauce, mayo, cream cheese, and ranch seasoning packet. Use a hand mixer to beat the mixture together until the cream cheese is completely blended.

  • Add 1 cup of Colby jack cheese, ½ cup of mozzarella cheese and pulled chicken. Use a rubber spatula to fold the mixture together.

  • Fold in diced celery and carrots.

  • Once the tots are finished baking. Remove them from the baking sheet and arrange half of the tots in a buttered (greased) skillet. Save the other half for the second portion of the skillet.

  • Top the tots with the remaining ½ of Colby Jack cheese, then layer on half of the buffalo chicken mixture on the tots. Arrange the remaining tots in the same radial arrangement on top of the buffalo chicken.

  • Spread the rest of the buffalo chicken mixture on top of the second layer of tots. Garnish with remaining green onion, any extra cheese (highly recommended).

  • Bake for 25-30 minutes at 350°F or until the buffalo chicken dip is hot and cheese is melted. Drizzle ranch dressing, feta crumbles, buffalo sauce, and anything else on top prior to serving.

  • Enjoy! Serve a la carte, with tortilla chips, and/or celery and carrots.
