  • Homemade fajita seasoning – sea salt, cumin, oregano, smoked paprika, cayenne pepper
  • Bell peppers – You can really use any type of bell peppers, I typically go with a red and yellow bell peppers for some variety and color, but you could use green bell peppers or a variety.
  • Onion – Use a white, yellow, or red onion. I typically recommend a yellow onion, but you can use any variety, whatever you prefer or have.
  • Garlic – Use fresh garlic for best flavor or frozen garlic cubes for a shortcut.
  • Tomato – The tomatoes are for a topping so you have a few options. Depending on the season, you could chop up a classic tomato or use a grape or cherry tomatoes if they are out of season. You could also use a pre-made pico de gallo as well.
  • Lettuce – Use a crunchy lettuce like romaine or iceberg. Slice it as thinly as you can.
  • Lime – The lime adds delicious citrus flavor, but you could also omit it if you prefer.
  • Shrimp – Look for raw shrimp that is peeled, deveined, and has no tail for easiest eating. Buy the best shrimp you can.
  • Oil – This is for cooking the shrimp so any vegetable oil like canola, olive oil, or avocado oil will work.
  • Tortillas – Traditionally, fajitas are used, but if you prefer, use warm corn tortillas instead.
  • Toppings – I like to include lettuce, tomato, shredded cheddar cheese, sour cream, salsa, hot sauce, and a squeeze of lime juice, but you can use any of your favorite fajita toppings.

Instead of jumping to negative conclusions, I tend to look at the food in a bigger view, so here’s what I see in this meal: protein (shrimp), produce (toppings), carbs/energy (tortilla), and flavor (all of it!).

Absolutely! Skip the tortillas and serve everything over some white, brown, or cauliflower rice for a burrito bowl meal.

Store leftovers in an airtight container in the refrigerator for 2-3 days.

How to reheat

Reheat shrimp and pepper mixture in a hot skillet for a few minutes, just until heated through. Be careful to not overheat as the shrimp will get rubbery. Microwaving is not recommend!

  • 2 cloves garlic
  • 2 tomatoes
  • 1 heart romaine lettuce
  • 1 lime
  • 16 oz. raw shrimp (peeled and deveined, no tail)
  • 1 Tbsp. vegetable oil
  • 8 flour fajita-size tortillas
  • toppings: shredded cheddar cheese, sour cream, hot sauce or salsa

Instructions

  1. Prep ingredients:
    In a small pinch bowl, stir together sea salt, cumin, oregano, and smoked paprika.
    Slice bell peppers in thin strips.
    Slice onion in half moons.
    Mince garlic cloves.
  2. Prep toppings: Thinly slice lettuce, chop tomatoes, cut limes into wedges and place onto a platter for serving.
  3. Heat oil in a large nonstick skillet over medium-high heat. Add sliced peppers and onions to skillet. Cook, stirring every minute or so for about 4-5 minutes, until softened. Add garlic and shrimp to skillet and sprinkle with seasonings. Cook for 4-5 minutes, just until shrimp are cooked through. Cooking time will vary slightly based on size of shrimp.
  4. Wrap tortillas in a kitchen towel and warm gently in the microwave.
  5. Assemble fajitas. Layer shrimp and pepper mixture into flour tortillas and top with toppings as desired.
