As promised about a month and a half ago, here is my grandmother’s BBQ hamburger recipe.

What I said in January…

When I saw the pic above of the Polish-American style BBQ hamburger, it made me think of my Babcia/Busia and how that burger was served up on many family events in B-F over the years. As the writer of the blog points out, it is not BBQ’d at all…but hey, we are Polish and we come up with our own stuff and names for things.

I have made similar BBQ hamburgers over the years, but never could get it quite the way my Babcia/Busia did…the only person to come close is my mother…I may just whip up a batch soon. A few years ago, my mother put together a family recipe book for me and my brothers.

Equally important to my Polish heritage is my Polish American heritage…the things my ancestors did whilebuildingtheir lives in America as immigrants…it is an important story.

    1. Zraziki Po Krakowsku (Polish Beef Roll-Ups)
      Ingredients:
      2 pounds round steak
      1 cup bread crumbs
      1 onion, grated
      1 egg, beaten
      8 tablespoons butter, melted
      1 tablespoon chopped parsley
      2 cups water
      salt and pepper

      Directions:
      Cut steak into thin pieces, about 4 1/2 by 2 inches. Score, sprinkle with salt and pepper.

      Combine bread crumbs, egg, onion and 4 tbs of the melted butter, salt and pepper.

      Spread the dressing on each piece of meat, roll up and fasten with a skewer or a toothpick.

      Roll in flour and brown in remaining butter. Add 2 cups of water (meat stock if you have it) and simmer 1 1/2 hours.

      Remove toothpicks. Pour gravy over meat. Garnish with chopped parsley and serve with mashed potatoes.

      1. What dressing were you referring to? Did you put it in a slowcooker or a cast iron pan? What temperature?

        1. The dressing he is referring to is the breadcrumbs and all the ingredients after that you make until like a stuffing ,dressing. That is what you spread on the meat roll it up and cook.

    2. Polish pork chops

      INGREDIENTS

      * 4 medium pork chops
      * salt
      * pepper
      * 1⁄4 teaspoon garlic powder
      * 1⁄4 teaspoon dried marjoram
      * 2 ounces plain flour
      * 1 egg, beaten
      * 1 tablespoon oil
      * 1 tablespoon butter

      DIRECTIONS
      * Pound out the pork chops until fairly thin. Season with salt, pepper, garlic powder and marjoram. Set aside. On separate plates, pour flour & egg . Dip each chop into the flour, coating on both sides, and then dip into the beaten egg. then back into flour, ensuring even coating.
      * Heat oil and butter in a large frying pan. When very hot, add the pork and cook over high heat for 3-5 minutes on each side.
      * Being sure not to over crowd the pan.
      * Lower heat and cook for another few minutes until golden.
      Keep warm in 18 qt oven.

    1. got it; 1/2 lb bacon, 2 tbsp. flour, 1/2 cup vinegar, 3/4 cup sugar, 1 medium size cabbage ( water to cover),
      1 teaspoon salt, 1/2 teaspoon pepper
      Cut bacon in small pieces and fry until well done. Add flour to panned stir until well blended with NO lumps. Remove from heat and add vinegar and sugar NOTE the ingredients shown above are a START you can add more vinegar/sugar to taste. return pan to flamed bring ingredients to a boil Take a good amount (2-4) cups of water of water out of the boiled cabbage ( if not taken out it will dilute the vinegar/sugar). Add bacon mixture and salt and pepper and simmer for 1 hour. There you have it. Just like my mother use to make. My mother prided herself with this recipe and I was fortunate to have it and make it…..never will be as GOOD as MOM!
