Having to cook dinners for the family every single night can be so boring, especially when you’re constantly trying to think of new things to cook. Kids get bored too and if they’re anything like mine they are not backwards about coming forwards about it.

I’ve also been in a bit of a ‘dinner rut’ recently, so I’ve decided to try and make one (or two if I’m feeling energetic) new recipes every week and I promise to share it with you.

Tonight we are having Chilli Con Carne and it’s really yummy(as well as super easy to make). It freezers well too.

A hearty and delicious chilli con carne that is best served with some fluffy rice.

Ingredients

  • 1 red capsicum
  • 2 carrots
  • 1 onion
  • 2 cloves of garlic
  • 2 sticks of celery
  • 10g olive oil
  • 500g mince
  • 1 tsp cumin
  • 1 tsp cinnamon
  • 1 tsp chilli powder/flakes (or fresh)
  • 1 tin kidney beans
  • 1 tin chick peas
  • 1 tin chopped tomatoes
  • 1 tbs veggie stock paste
  • 1 tbs balsamic vinegar
  • 50g tomato paste
  • black pepper

Instructions

  1. Chop the onion and garlic for 5 seconds on speed 5.
  2. Add the oil and saute for 3 mins on 100 degrees, speed 1.
  3. Add the carrots, capsicum and celery and chop for 3 seconds on speed 5.
  4. Add the cumin, chilli flakes, cinnamon and black pepper and cook on reverse speed soft for 5 mins at 100 degrees.
  5. Add the kidney beans, tomatoes, tomato paste, chickpeas, balsamic vinegar and stock and mix on reverse speed 1 for 30 seconds.
  6. Add the mince and cook for 25 mins on reverse speed soft at 100 degrees.
  7. Serve with rice and a dollop of plain yoghurt.

Notes

I would advice you halve the chilli if cooking this for children as it can be a little spicy. This recipe is freezable.

  4. How good is chilli con carne!
    So yum, full,of flavour I’ll do it with rice & serve corn chips on side and save any leftovers for a lunch for me and mum. We put it on a huge jacket baked potato… Yum.
    I love changing it up for dinner to, so easy to get into a rut with same same. The annoying thing is my youngest prefers the meat & 3 vege (or 2 veg really) where as the rest of us love a change up… Juggling everyone’s wants is not an easy feat for my hey.

  6. I’ve made this twice in two weeks now.
    It is so beautiful & a hit with everyone.
    The first time I served it with rice. The second time I served it over corn chips & made nacho’s.
    I’m looking forwards to trying alot more of your recipes 🙂

      • Amazing recipe that I make all the time! Also save some and add to burritos. I’ve used it for nachos as well, but I make it ‘dryer’ for that so the chips don’t get soggy!

    Went out to tractors for harvest tea in WA
    Served with handful of corn chips sour cream and avocado and broccoli
    Felt like a Mexican fiesta!!

  13. It’s a winner!! Two rice and curry hating boys loved this, I left out the chilli as even mild is too spicy for them! I didn’t have cumin so I substituted some ground coriander, paprika and caraway. Totally delish, thanks for sharing 🙂

  15. I make this about once a week in our house, for my 2 year old & husband & both devour it. I love that you can hide whatever veggies you have on hand (eg. zucchini, broccoli). It’s a always a winner & plates are always empty. Thanks so much for this recipe. 🙂

  19. Hi would this still be nice with chicken or turkey mince & would the cook time/temp differ at all please? I’ve made this with beef mince & it was much loved but I’d prefer to avoid red meat.

  21. 😍😍😍 I did a small shake of Cinnamon instead of a teaspoon. Also left out the celery as I didn’t have any. We served with Sour Cream and Corn Chips. Amazing 😁

  23. I think this is my favourite thermomix recipe ever. I have one veg daughter and I just take some out at the step before adding the mince for her. We eat with rice, sour cream and coriander. Feeds us for two meals (me and five kids). Very economical!

  25. Tried this recipe tonight, I swoped the kidney beans for a tin of mixed red kidney/pinto and black beans and added a heaped teaspoon of organic cacao (chocolate) powder in with the chilli and other spices- adds real depth of flavour.

    Had ours on tacos 🌮 with sour cream, lettuce 🥬 and tomato.

  27. who loves/needs extra heavy work to be reading papers that consistently refer to proprioception disorder, when I’m merely trying to learn about the usefulness of this type of physical activity. I know those papers are possibly referring to extreme cases, however it hurts to read that word in connection with your baby. Again, thank you! Thank you for this enlightening (intellectually and emotionally ) article.

    This is great receipt, full of flavor.
    I shredded half a small bag of spinach, and added it towards end.
