After posting so many delicious Apple Pie desserts on Instagram, it’s definitely time to share my favorite recipe for a classic American Apple Pie on my blog. This recipe is actually the basic recipe that I have also used for all other treats, such as mini apple pie muffins, apple pie hand pies, and hot apple pie pockets.

If I had to decide which cake I like best, it would be most likely an apple cake or apple pie. Not only because this simple pie is so easy to make, but also because it’s so incredibly delicious. The cinnamon apple filling makes it perfect for fall, but also reminds of Christmas and Thanksgiving. Once your house starts smelling so heavenly, thanks to the baked cinnamon apples, you‘ll notice what I mean and get into a cozy and relaxed Christmas mood.

Homemade Pie Crust is easy to make

Traditional Pie crust is usually made of flour, butter, a bit of sugar, water and a pinch of salt. To make this Pie crust dairy-free, I use vegan butter. I assure you, the result will be the same and as delicious as using regular butter. You will not notice the difference. I prefer making the pastry myself, but you can also use store-bought pastry dough to make this recipe.

How to make a simple vegan Apple Pie

First, cut the prepared pastry dough in half and roll out both halves. One half is for the bottom, and the other half is to cover the Pie. You can either put the second rolled out dough as a whole on top, or cut into strips using a pizza cutter or knife to make a lattice design, as I did.

Apple Cinnamon Filling

To make the filling, peel and core the apples, then slice thinly. Combine sliced apples with sugar, cornstarch, cinnamon and lemon juice in a large bowl. Toss until the apples are well-coated and set aside. Transfer the rolled out pastry dough for the bottom to a greased 10,5-inch (27-cm) pie dish or springform tin and gently press against the bottom and sides. Prick the bottom of the pie crust all over with a fork and then fill with the apples.

Cover the Apple Pie with a lattice design

As mentioned before, you can either cover the Apple pie filling with the whole pastry dough or cutting into strips to make a lattice design. After laying the pastry strips on top of the apple pie filling, trim the overhanging dough around the edges and carefully, crimp the top and bottom of the pastry a bit together. I love using any leftover pastry to make decorations for the pie because it’s so pretty. Just shape the remaining dough into a ball, roll out again and cut out designs of choice using a cookie cutter (I used a flower design). Place them on top of the crust and brush the top with a little plant-based milk/ cream or melted coconut oil. Then sprinkle with a bit of brown sugar and bake until golden brown. That’s it!

A versatile Apple Pie recipe

This recipe is super versatile. You can cut out circles, quarters or rectangles to make hand pies or hot pockets. You could also lay out the pastry into muffin tins to make mini apple pies. If you decide to do so, just cut the apples slightly smaller and always make sure to seal the sides of the pastry so the filling will not leak out. Also, have a look at your pastry during baking because smaller sized pies are done faster. Just feel free to be creative and try out different Apple Pie varieties! Maybe you would also like to try my vegan cherry pie. Have fun baking!

Ingredients

Pie Crust:

  • 2 ½ cups (375 g) flour plus more for dusting, *see notes
  • 3 tbsp sugar *see notes
  • ½ tsp salt
  • 1 cup (225 g) vegan butter diced and chilled
  • 4 tbsp cold water

Cinnamon Apple Filling:

  • 2 lbs (1 kg) apples
  • ½ cup (100 g) sugar *see notes
  • 2 tbsp cornstarch
  • 1-2 tsp cinnamon
  • ¼ tsp nutmeg optional
  • ½ lemon juiced

To brush:

  • a bit of plant milk / dairy-free cream or melted coconut oil
  • 1 tbsp brown sugar

Instructions

*Note: I recommend watching the recipe video for visual instruction!

    Pie crust:

    • In a large bowl, combine the flour, sugar, and salt. Add the vegan butter pieces and work it into the flour mixture with your hands. Gradually, add the cold water, a tablespoon at a time, and knead just until the dough comes together. (Optionally, you could also put all ingredients to a food processor and pulse until a dough forms.)

    • Divide the dough in half and shape into a ball or disc. Wrap in cling film and refrigerate for at least ½ hour.

    Filling:

    • Preheat the oven to 350 °F (180 °C).

    • Peel and core the apples, then thinly slice.

    • Transfer to a large bowl and add sugar, cornstarch, cinnamon, and lemon juice. Toss until the apples are well-coated. Set aside.

    • On a lightly floured surface, roll out one half of the dough. Transfer to a greased pie dish* and gently press against the bottom and sides. Prick the bottom of the pie crust all over with a fork and then fill with the apples.

    • Now roll out the other half of the dough and cut into strips. Lay them on top of the pie to make a lattice design (or cover with the whole rolled out dough*). Trim the overhanging dough and crimp around the edges.

    • Optionally, use any leftover pastry to make decorations for the pie. Form the remaining dough into a ball, roll it out again, and cut out designs of choice using a cookie cutter. Then place them on top of the pie crust. (Watch the recipe video for more inspiration).

    • Brush the top of the pie with a little plant milk or cream or melted coconut oil and sprinkle with a bit of brown sugar.

    • Bake the pie for about 50-60 minutes until golden brown. Cover the sides or top with tin foil if it gets too dark during baking.

    • Let your Apple Pie cool before serving.

    • Serve with a dollop of vegan ice cream and extra syrup, if you like!

    • Enjoy!

    Notes

    • I used a10.5-inch (27-cm) pie dish but you could also use a tart or springform pan. A smaller size should work too.
    • To make this cake gluten-free, you can use a gluten-free flour blend 1:1.
    • To make this Apple Pie sugar-free, you can use Erythritol. You could also use coconut sugar, or regular white sugar, if you like.
    • If you prefer to cover the pie with the whole rolled out crust (without cutting into strips to create a lattice design), then make sure to cut a hole in the center of the top crust (or prick a few times with a fork) to allow steam out.

    FAQs

How do you make an apple pie not runny? ›

The best way to thicken runny apple pie filling before baking it is to add some cornstarch, tapioca starch, or flour to your mix. To fix a runny pie that's already been baked, simply let it cool to see if it will congeal naturally. If not, you can stick it back in the oven for a bit longer.

Are most apple pies vegan? ›

A: Most apple pies contain butter, milk and sometimes eggs, so are therefore not vegan.

How can I thicken my apple pie without cornstarch? ›

    All-Purpose Flour

It thickens at at lower temperature than other starches and works great as an all-purpose thickener since you probably have it around.

What is the best thickener for pie filling? ›

Very often flour or cornstarch is used, but in certain instances tapioca, arrowroot and potato starch can also help achieve the desired consistency. Tapioca starch is preferable for products that will be frozen because it will not break down when thawed. We like tapioca in blueberry, cherry or peach pies.

Why is my apple pie full of liquid? ›

If you don't bake your pie at a high enough temp your thickener doesn't get to the necessary temperature for a long enough time to thicken your filling. Also, that high temp is needed to get your pie crust light & flaky. If needed, use a pie shield to help protect your crust from burning.

What is the best thickener for apple pie? ›

The best way to thicken runny apple pie filling before baking it is to add some cornstarch, tapioca starch, or flour to your mix. To fix a runny pie that's already been baked, simply let it cool to see if it will congeal naturally.

What apples not to use for pie? ›

For more on all these apples, including what they look and taste like, see our baking apple guide below. There are a few apples that don't make the cut. While great for snacking, Gala, Fuji and Red Delicious are the most common apples that won't hold up in the oven and will give you a watery-mushy pie, tart or cake.

Should you cook apples before putting in pie? ›

Should you cook the apples before baking apple pie? You don't have to pre-cook the filling before spooning it into the pie crust, but it's a quick step I recommend. Just 5 minutes on the stove begins the softening process, and also helps the flavors start to mingle.

What brand of pie is vegan? ›

Freshly baked desserts are made easy with OG freezer brand Sara Lee. All fruit pies are vegan, so opt for a Dutch Apple, Lattice Peach, or Mince Pie.

Is the McDonald's apple pie vegan? ›

Fortunately, McDonald's apple pies are vegan!

    Are vegan pies healthy? ›

    Benefits of Eating Vegan Pies

Additionally, vegan pies tend to be packed full of plant-based protein sources like beans or lentils, as well as nutrient-rich vegetables and healthy spices, which can all contribute to a more nutritious, well-balanced diet.

Is it better to use flour or cornstarch for apple pie? ›

Corn starch lends a glossy thickness and adds sheen to the filling while flour adds opacity and some mouthfeel so that it has a sort-of creaminess. With all corn starch the filling reminds me too much of store-bought pies with that gloopy clear gel-like texture and with all flour it can get too lumpy and stodgy.

Is flour or cornstarch better for pie filling? ›

    Cornstarch as Pie Filling Thickener

Cornstarch is faster-acting than flour and forms a smooth, relatively clear filling. Just be aware that too much cornstarch can create a slimy texture.

How do you thicken an apple pie? ›

Cornstarch has thickening power similar to Instant ClearJel. Like flour, it lends a cloudy, semi-transparent look to filling. It can also give filling a starchy taste.

How do you bake an apple pie so the bottom crust is not soggy? ›

Brush the Bottom with Corn Syrup or Egg White

Coating the inside surface of the bottom crust will create a barrier to prevent sogginess.

Will pie filling thicken as it cools? ›

And, finally, as much as a steaming-hot slice of apple pie sounds appealing, let your pie rest for at least an hour before slicing. The filling will thicken as it cools and don't worry—your pie will still be plenty warm enough to gently melt that scoop of vanilla ice cream on top of it.
